Peas Kids Will Eat

Let’s face it, green foods are a hard sell with many kids, and mine are no different. My oldest daughter won’t even eat kiwi fruit. Thankfully peas hold some allure for her, and she’ll gladly eat them by the spoonful. There’s a restaurant, Corsino Cantina, in Greenwich Village, New York City that uses peas as the star ingredient in one of their crostini, an Italian appetizer of toasted bread with a spread or topping.

I first came across this dish during the winter time, and figured they must be using frozen peas since fresh ones weren’t in season. I decided to go home and raid my own pantry to recreate the recipe from my taste buds’ memory. There are so many reasons to love this recipe. It’s fast, easy to make with the kids and I love how such an inexpensive ingredient like frozen peas, are elevated to gourmet.
