Gazpacho with Fresh Mozzarella and Garlic Croutons

5cups crushed, super ripe tomatoes
2tablespoons sherry or balsamic vinegar
2teaspoons sugar
1tablespoon olive oil
1/2teaspoon coarse salt
6ounces fresh mozzarella, sliced or cubed
1/2cup slivered fresh basil
10slices baguette slices
2tablespoons melted butter
1teaspoon garlic powder
1/2teaspoon salt


  1. Crush tomatoes with your hands, sprinkle with sugar, sherry vinegar, good olive oil, and kosher salt, then put them aside to “stew.”
  2. Place fresh mozzarella in pasta bowls. Top with 1 cup tomatoes, basil and croutons.
